I specialize in producing the freshest pasta available through utilizing locally sourced eggs and fresh milled wheat flour.
I use a special bronze die extruding machine to produce pastas such as pappardelle, penne, spaghetti, rigatoni etc. All other pastas take time and are handmade. While I pay homage to Italy's traditions of making pasta, I use local ingredients and support farmers in Wisconsin that use sustainable practices or organic farming methods. From wheat flour, to cheese, to produce, I use our country's hard-working farmers and artisans to craft my product.
Filled pastas, bronze die extruded shapes, hand formed, gnocchi, herb and flower laminated, doughs infused with vegetables or flavors like saffron, truffle, squid ink etc. My goal is to offer consumers traditional products with the highest quality as well as very unique creative offerings. Seasonal flavors and customizable orders are available.
