The Mango Man Cooks Brand
Chef Thony Clarke aka The Mango Man set roots in Madison, WI with his first food cart, Cafe Costa Rica, in 2004. His Afro-Latino family-run business nurtured and grew the Mango Man Cooks food and brand. The retail food line was formally established in 2017. Thony has worked closely and established a strong relationship with the larger local food movement. There are currently two hot sauces, originally developed by him in the Cafe Costa Rica restaurants, for sale by local retailers.
Mango Man Cooks is excited to expand both the sales area and product line. We are especially hoping to partner with food cooperatives and specialty food retailers in a larger Midwest region as we've done here in Dane County. There is a product line of fifteen additional unique sauces/dressings/marinades, packaged snacks, and frozen entrees currently in varying stages of development.
The Sauces
The Mango Man Salsa and the Monte Verde Salsa, have been featured in his restaurant and food cart for nearly 20 years. They are available at the Willy Street Food Cooperative locations in Madison and Middleton as well as at several local specialty and gourmet food retailers. Chef Thony currently produces his sauces in small batches by hand at local Food Enterprise and Economic Development (FEED) Kitchens on the Northside of Madison.
